I feed my tortoises California Burr clovers (the clover should be fed sparingly), grass, hibiscus leaves and flowers, dandelion leaves and flowers, mulberry leaves, grape leaves, cactus (needles skinned), hollyhock leaves and flowers, and rose&petunia flowers. There are a lot more edible plants, just check to make sure they aren't poisonous before giving to your tortoise.
You can also put in the tortoise's enclosure cuttle bone (like the ones you give to birds) just remove the hard covering on the back of the cuttlebone. I only use the romain lettuce for putting calcium powder on. Most tortoises are attracted to bright colors so you can always dust edible flowers with calcium if they are picky eaters.
There are plenty of plants and different foods that are healthy to feed your tortoise. You should always check online/book to see which plants/food can be given, please double check with more than one resource.

!!!PREPARING CACTUS!!!
There are different types of cactus but the most available is the one with lots of needles.
You can cut off the "tail end" of the cactus.
Then you start cutting away the needles and "moles" on the cactus. Be very careful as they can get in your skin easily. You can see the large needles in the pics but there's also tiny hair like needles that hurt just as much if not more if you get them in you.
Once you're done skinning all the needles off, it's best to scan over your cactus to make sure there aren't any needles lodged inside the cactus or hiding from you. You may need tweezers to get them out.
You can either feed your cactus right away or refrigerate it. If you refrigerate the cactus it usually stays fresh for 2-4 days if kept in a freezer bag.
Now we are ready to toss the cactus out!
